Tender shrimp, rich Parmesan cream sauce and sun dried tomatoes come together for a dinner that feels special without taking all evening.
Serves: 4
Prep time: 10 minutes
Cook time: 15 minutes
Ingredients
- 1½ pounds large raw shrimp, peeled and deveined, tails removed
- 1 tablespoon olive oil
- 2 tablespoons butter
- ¼ teaspoon salt
- ½ teaspoon black pepper
- 4 garlic cloves, finely minced
- ½ cup sun dried tomatoes packed in oil, drained and sliced
- ½ cup reduced sodium chicken broth
- ¾ cup heavy cream
- ½ teaspoon Italian seasoning
- ½ cup freshly grated Parmesan
- 3 cups fresh baby spinach
- 2 tablespoons chopped fresh basil
Directions
- Pat shrimp dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium high heat. Add shrimp in a single layer, working in batches if necessary. Cook for about 2 minutes per side, until pearly and opaque throughout. Transfer to a clean plate.
- Reduce heat to medium. Add butter, garlic and sun dried tomatoes to the skillet. Cook for 1 minute, stirring frequently.
- Pour in chicken broth, scraping up any browned bits. Stir in heavy cream and Italian seasoning. Bring to a gentle simmer and cook for 3 to 4 minutes.
- Reduce heat to low. Gradually stir in Parmesan until melted. Add spinach and stir for about 2 minutes, until wilted.
- Return shrimp and any collected juices to the skillet. Toss gently for about 1 minute, just until warmed through. Finish with fresh basil and serve.
The Secret to Tender Shrimp
Remove the shrimp while you make the sauce and return them only at the end. This keeps them tender instead of rubbery.
Serving Idea
Spoon over fettuccine, rice or creamy mashed potatoes. Add crusty bread to soak up the garlic Parmesan sauce.
